Sayulita Smoothie!

I had this smoothie in Sayulita, Mexico while on a yoga retreat with my teacher and it was so good!  I went to that little restaurant sometimes twice a day for this incredible yumminess!

What you need:  
1 avocado
1 large handful of spinach
1 small handful of mint leaves
1 small handful of basil leaves
1 cup of fresh pineapple chunks
8oz of orange juice
Juice from ½ a lime

To do: Blend and enjoy.  Add ice water or more oj for desired consistency.

Juice for the Common Cold

To prevent the sniffles or to combat the common cold try this natural remedy.

What you need:
8 oz of filtered water
1 finely chopped carrot
½ cup sliced fresh pineapple
1 small ginger
2 cloves of garlic

To do:
Blend all ingredients together and drink when you feel a cold coming on.

Night Time Golden Milk

Ok.  This is just so darn good.  It’s a fabulous way to fight inflammation (turmeric) and invite your body to rest in the evening.

What you need:
1 inch thin slice of ginger
1 cinnamon stick
½ tsp turmeric
1 cup coconut milk or milk of choice
1 cup water
½ tsp black pepper
1 tsp coconut oil
1 tsp honey

To Do:
Combine all ingredients into a pot and bring to a boil.  Lower heat and let simmer 10 minutes while occasionally stirring.  Strain & serve.

Tropical Chia Pudding (serves 2)

What you need:
1 ¼ cup coconut milk (or your choice)
1 tblspn lime juice
1 lime zested
½ tblspn coconut butter melted
2 tblspns shredded coconut
2 tblspns maple syrup
¼ cup black chia seeds

To Do:   In a medium sized bowl, mix together milk, lime juice, zest, melted coconut butter, shredded coconut, and syrup.  Add chia and stir to combine.  Cover and leave to refrigerate for at least 4 hours (preferably overnight).  Serve with slices of fruit, nuts, seeds, and a squeeze of lime. Store covered up to 3 days

Triple Bean Salad

What you need:
1 can low sodium Black Beans
1 can low sodium Northern White Beans
1 can low sodium Pinto Beans
1 shallot chopped fine
1 bunch of herbs (perhaps dill, or parsley, or cilantro etc)
2 tblspns olive oil
1 tspn sea salt
1 large juicy lemon

To Do:
Strain and wash the beans and put in large bowl.  Combine shallot, oil, herb of choice, sea salt, and lemon.  Depending on the juice of the lemon, sometimes 2 are needed.  Chill and serve.
